More myths and traditions have developed around the drinking and enjoyment of Port than probably any other wine, but don’t let this intimidate you – Port is a fabulous wine that is quite easy to serve and enjoy.

Storing
Port should be treated as with other fine wines. These bottles should be stored at a moderate and reasonably constant temperature and on their sides so the cork doesn't dry out. This also aids in the development of the crust. Most Vintage Port bottles have a white mark painted on the side. This mark should be kept facing up. If you should have to move the bottle, you can then return it to the same position.

Decanting
Vintage Port develops natural sediment with time, so it is customarily served by being transferred into a decanter, taking care to leave the sediment behind. Decanting the Port is not difficult. It just requires a steady hand and a good eye. Stand the bottle up for about half an hour before pulling the cork in one continuous motion; slowly pour the wine into a freshly rinsed decanter. When the sediment begins to appear in the neck of the bottle, stop pouring and discard the sediment.

Serving
There is no wrong time to serve Port, but it is especially enjoyable when relaxing or when enjoying the company of close friends. Port is delicious served with cheeses or nuts and compliments many desserts, particularly chocolate.

Vintage Ports are best served slightly below room temperature. Port is quite often served too warm — 70 degrees and more. This makes the wine too volatile and difficult to taste. It should be served between 65 and 68 degrees Fahrenheit — or 18°C.

Vintage Port is often served in totally inappropriate glasses. This is one of the world’s great wines; its colour, aromas and flavours are to be enjoyed. A medium sized tulip shaped glass is ideal so that the wine can be swirled around and the superb aromas released.

Traditionally, the port decanter is passed clockwise around the table, from right to left. There are many repeated reasons for this tradition but the one most accepted is very practical. Most people are right handed and it is easier for right-handed people to pass the Port to the left. The most important fact is to make sure that everybody has a full glass.

The Nose
Don’t overlook the importance and sheer enjoyment of simply smelling your vintage Port before each sip. The nose of this magnificent wine is wonderfully seductive and complex, hinting at the delicious flavours that are to come.

A great bottle of Port is indeed a treasure to be guarded – but most of all to be enjoyed. Sharing a bottle of Port with friends anytime makes the moment that much more memorable.
